"Our philosophy is based on using local and seasonal products," explains Gabriele Macelloni. "Choosing fresh, farm-to-table ingredients ensures the quality of our dishes and also supports the local economy, reducing the environmental impact. The restaurant uses local vegetables, Chianina beef from farmers within a 15-20 km radius, organic honey, goat cheese, herbal teas and homemade preserves made with organic vegetables, thus offering an authentic and sustainable culinary experience".

The menu at Ristorante La Miniera thus celebrates Tuscan tradition, enriched by the innovative touch of Chef Gabriele Rosini. "Among our most representative dishes are the homemade tagliolini with San Miniato truffle, pappardelle with wild boar sauce, and crispy tempura cod bites on a base of pappa al pomodoro. Creations like the 'inverted' tiramisu and pistachio cheesecake are other delights that captivate our guests," says Macelloni.

Despite its inland location, the proximity to the Etruscan Coast allows Ristorante La Miniera to offer fresh seafood dishes. "Chef Rosini, who joined us after extensive experience in seafood restaurants on the Tuscan coast, also creates delicious preparations such as cacciucco alla livornese and seafood pasta dishes that are highly appreciated by our customers," says Macelloni. La Miniera also passionately promotes traditional Tuscan dishes, respecting the original recipes. “The spinach and ricotta-filled tortello, handcrafted in our restaurant, best represents our local gastronomic tradition," says Macelloni. "Wild boar, cooked according to traditional Tuscan recipes, is also featured on our menu, often paired with tagliatelle al ragù, offering a rustic and authentic flavor".
